Cauliflower Pizza Crust

Ok, My husband and I are doing the 4-Hour Body and sometimes the meals get repetitive.

I found this awesome recipe for a Cauliflower Crusted Pizza! It just finished and I cannot wait to try it.

Here is the Recipe:

Cauliflower Crusted Pizza


2 Cup Cooked riced Cauliflower
1 Cup Shredded mozzarella cheese
1/2 Cup grated parmesan cheese
1 egg, beaten
1 tsp. dried oregano
1/2 tsp. crushed garlic
1/2 tsp. salt

Pizza Sauce, shredded cheese, and your choice of toppings, I used ham, pepperoni, linguica, spinach, tomatoes and onions*


DIRECTIONS:



To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 2 cup cauliflower, egg and mozzarella, and parmesan cheese. Add oregano, crushed garlic and salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 12" round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

*Note that toppings need to be precooked since you are only broiling for a few minutes.

Another Wonderful Fun Dinner!

What an amazing dinner last night!  Keith has really started loving to cook.  Well, last night I was his sous chef, lol! 

We watched Julie, Julia the other night and Keith wanted to make Beef  Bourgogne.  OMG, that is one heck of a recipe.  He started it at 3 pm, and I think we ate by 6:30 or so.  Lots of detail in Julia Child's Cookbook , called "Master the Art of French Cooking", if u do not have this cookbook, it is so worth the buy!

This dinner was delicious.   My neighbor Maggie came up and our son Josh was here and the wine was flowing.  I love having people over for dinner and enjoying the evening's conversation.

Watching Keith as he is reading the recipe and cooking is a lot of fun.  Here is a guy who could  not cook a few years ago and now makes amazing meals.

Motivation!

I really need some motivation!  I am on a weight loss journey with my husband Keith.  We have gone Primal!  Primal Blueprint and 4 Hour Body!  This is the first time Keith has ever wanted to do something like this.  We have some friends that did this and they have lost like 30 lbs.  So that was his motivation.  Our biggest obstacle is cocktails.  That is the toughest to give up as we love to relax at the end of the day.

Now with the 4 hour body book, u can have 2 glasses os wine a day, but who can stop at 2?  Not us., so it is better to just give it up!  Don't drink your calories.

You do get one cheat day a week, our day is Saturday.  You eat whatever you want.  By the time you finish that cheat day, you are ready for no more junk food.  Pancakes, junk, candy bars, etc....  This resets your hormones for faster weight loss.  Seriously!!

During the week we eat so good.  I want to lose 30 lbs.  Cannot believe I just said that. 

We lived in Holland for almost 5 years, and we were in such good shape.  WHY?  Because they do not have a lot of junk food.  America's food is horrible.  Portions are huge and gross.  Since we have eliminated bad carbs, we are feeling great.  Europeans ride their bikes everywhere, here in America, its tough to ride anywhere as we are alll so far away from everything.

So, maybe if I blog this I will be held accountable for coktail actions.  Her I go!  You all can watch.

With this diet, I call it "Lifestyle Change" for the better, you do not have to exercise so much.   I am still going to work out 4x a week.  TOday we are going for 2 mile walk before lunch, the weather is beautiful here.  Last night I went to a step class.

I have been helping Keith and his company with marketing.  I am learning what they do and I am making a video presentation.  It is kind of frustrating as I am still figuring out WTH they do, but he has all his confidence in me to do this.  I have made their Banners and business cards.  I can do this!

Just Life!

Hey Everyone,

Life is great. We were wishing that we had some winter here in Nevada. For some stupid reason the snow and the rain are just not coming to see us. It is going to be bad for our farmers around here.

Keith and I are doing great. I am turning 50 in 2 weeks and am really nervous about being 50. I know, Keith and I are trying to figure out what to do for my birthday! I have no clue.

We love to have friends over for dinner and everyone has been so busy lately that we have not had dinner with anyone for awhile. Everyone has been busy at work.

On a good note, our Josh is home and that is nice having him around. He has a job and it is tough but he does ok. He is trying to figure out what he wants to do with his life.

Jordan is busy at college. He lives his life!
