Cauliflower Pizza Crust

Ok, My husband and I are doing the 4-Hour Body and sometimes the meals get repetitive.

I found this awesome recipe for a Cauliflower Crusted Pizza! It just finished and I cannot wait to try it.

Here is the Recipe:

Cauliflower Crusted Pizza


2 Cup Cooked riced Cauliflower
1 Cup Shredded mozzarella cheese
1/2 Cup grated parmesan cheese
1 egg, beaten
1 tsp. dried oregano
1/2 tsp. crushed garlic
1/2 tsp. salt


Directions after fotos!









Pizza Sauce, shredded cheese, and your choice of toppings, I used ham, pepperoni, linguica, spinach, tomatoes and onions*


DIRECTIONS:



To "Rice" the Cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes. There is no need to add water, as the natural moisture in the cauliflower is enough to cook itself.
One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.
To Make the Pizza Crust:
Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray.
In a medium bowl, stir together 2 cup cauliflower, egg and mozzarella, and parmesan cheese. Add oregano, crushed garlic and salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 12" round. Optional: Brush olive oil over top of mixture to help with browning.
Bake at 450 degrees for 15 minutes.
Remove from oven. To the crust, add sauce, toppings and cheese. Place under a broiler at high heat just until cheese is melted (approximately 3-4 minutes).

*Note that toppings need to be precooked since you are only broiling for a few minutes.

Another Wonderful Fun Dinner!

What an amazing dinner last night!  Keith has really started loving to cook.  Well, last night I was his sous chef, lol! 

We watched Julie, Julia the other night and Keith wanted to make Beef  Bourgogne.  OMG, that is one heck of a recipe.  He started it at 3 pm, and I think we ate by 6:30 or so.  Lots of detail in Julia Child's Cookbook , called "Master the Art of French Cooking", if u do not have this cookbook, it is so worth the buy!

This dinner was delicious.   My neighbor Maggie came up and our son Josh was here and the wine was flowing.  I love having people over for dinner and enjoying the evening's conversation.

Watching Keith as he is reading the recipe and cooking is a lot of fun.  Here is a guy who could  not cook a few years ago and now makes amazing meals.

Motivation!

I really need some motivation!  I am on a weight loss journey with my husband Keith.  We have gone Primal!  Primal Blueprint and 4 Hour Body!  This is the first time Keith has ever wanted to do something like this.  We have some friends that did this and they have lost like 30 lbs.  So that was his motivation.  Our biggest obstacle is cocktails.  That is the toughest to give up as we love to relax at the end of the day.

Now with the 4 hour body book, u can have 2 glasses os wine a day, but who can stop at 2?  Not us., so it is better to just give it up!  Don't drink your calories.

You do get one cheat day a week, our day is Saturday.  You eat whatever you want.  By the time you finish that cheat day, you are ready for no more junk food.  Pancakes, junk, candy bars, etc....  This resets your hormones for faster weight loss.  Seriously!!

During the week we eat so good.  I want to lose 30 lbs.  Cannot believe I just said that. 

We lived in Holland for almost 5 years, and we were in such good shape.  WHY?  Because they do not have a lot of junk food.  America's food is horrible.  Portions are huge and gross.  Since we have eliminated bad carbs, we are feeling great.  Europeans ride their bikes everywhere, here in America, its tough to ride anywhere as we are alll so far away from everything.

So, maybe if I blog this I will be held accountable for coktail actions.  Her I go!  You all can watch.

With this diet, I call it "Lifestyle Change" for the better, you do not have to exercise so much.   I am still going to work out 4x a week.  TOday we are going for 2 mile walk before lunch, the weather is beautiful here.  Last night I went to a step class.

I have been helping Keith and his company with marketing.  I am learning what they do and I am making a video presentation.  It is kind of frustrating as I am still figuring out WTH they do, but he has all his confidence in me to do this.  I have made their Banners and business cards.  I can do this!

Just Life!

Hey Everyone,

Life is great. We were wishing that we had some winter here in Nevada. For some stupid reason the snow and the rain are just not coming to see us. It is going to be bad for our farmers around here.

Keith and I are doing great. I am turning 50 in 2 weeks and am really nervous about being 50. I know, Keith and I are trying to figure out what to do for my birthday! I have no clue.

We love to have friends over for dinner and everyone has been so busy lately that we have not had dinner with anyone for awhile. Everyone has been busy at work.

On a good note, our Josh is home and that is nice having him around. He has a job and it is tough but he does ok. He is trying to figure out what he wants to do with his life.

Jordan is busy at college. He lives his life!

Dinner with Friends Tonight! YAY!!

Hello there,

Tonight we are having our friends over for dinner. I love these nights so much. Matt and Yolanda (my bff YO YOO), and m neighbor Maggie (bff too).

I made beef rollups that are going tto be so yummy.

Keith went to Reno today to take a lesson in a plane, now is being diverted on his travels home because we have a fire on the route he is taken. Noww has to go out of his way to get hme.. grrrr

I wonder if I am able to post fotos on this page .

Fitness Nut!

I LOVE TO EXERCISE.!! But as I have gotten older I get bored pretty quick anymore. I am so not motivated to work out that much anymore, but I make myself.

My BFF Yolanda, I call her YO YO, she is awesome, well, anyways, we make each other go hiking and we also take a step class 2 nights a week.

I am now on a healthy quest and so is my hubby. No more processed food at all. We both have just about given up drinking and now only socially, just is not good anymore, so I hope to lose a few pounds that way too.

I am a certified fitness instructor and when we lived in Holland for 5 years, I really got into it there and lost a lot of weight. Hard to teach where I live now as we are so far from town. I'm going to get back in shape and try and personal train again. Too Fun!!

Life In General!!!

Hi All,

I am so excited to start this BLOG!!!! Life is awesome. My last kid left for college a year ago and we are finally adjusting to lives with just my Husband and I.

We have Harleys and we ride all the time.. Our favorite weekends are when we ride to nowhere and stay over night, then the next morning we ride somewhere else and stay over. We have soo much fun together.

Keith and I have been married for 27 years and are still so in love with each other...

I want this blog to be of fun things that I do and what everyone else does too...

I love to Ride my Harley, Love to Quilt (new hobby), I have been sewing for 25 years and love to sew. Love to play on my Ipad.

I LOVE TO COOK ! My husband is called the "Master Stirrer" and drives me nuts in the kitchen, but he tries so hard. He can really cook now, as long as lon as he has a recipe.. lol
